Gotsa Bracelet

I shall be wearing this lovely bracelet to the wedding! This one struck my eye for being so unique but I wasn't sure about it's chunkiness.(It's 2 in. thick) But then I checked Alfred Angelo to see what kind of jewelry the model in my dress was wearing. She's wearing a chunky pearl bracelet with chandelier earrings. Yay! So, now all I gotta find is earrings. I think I'll go to the mall for that. Matt ordered the bracelet today as part of my Mother's Day gift. He's such a good boy ;)

The bracelet was made by Nanda over at Etsy. What do you think of it?

I love this Jewelry





I was just searching around on the net. Not really with any purpose. I'm sort of looking for earrings for my bridesmaids and I. The purple pair above would work but they are sold out. All of these pieces were made by Eclectic Eccentricity Jewellery. Yes, I know I spelled jewelry wrong. That's how they spell it!

Violet and Colby Dog



We got Colby when I was in 9th grade. He has always looked like a baby bear. Violet just loves him! She talks in a soft voice to him like he's a baby. She chases him all over the house and sometimes chills on the couch with him. She is fascinated with his dog food. About once a week we find a pair of shoes in his dog food bag.

Today I had put Violet on the recliner so she could watch cartoons. I tucked her in and gave her Boz and milk. A little while later she's telling me, "see Colby sleepy". She covered him with the blanket and put Boz under his arm! I snapped the picture just as little diaper butt was running behind the chair.

My Purple Wedding Shoes

I have been searching for months for the right shoe! A friend lead me to these at Newport-News.com. Here's my checklist for my shoe...

purple- CHECK
tall- CHECK
wedge-CHECK
dressy- CHECK
not cork- CHECK

Yay! No more staring at every shoe for sale online or in a store. I'm so happy! We ordered the bridesmaids shoes last week from Payless. They should be here any day. I guess I need to blog about my wedding check off list. That's next!

Low Carb Tuna Patties

To start off let me just say that I usually don't like tuna. But these were awesome! I ate them with a honey mustard salad. Good and low carb! I'm trying to eat low carb after 2pm everyday. I'm giving it a weeks try. I started on Monday. I feel lighter already but I won't weigh in until next week.

I made up the recipe from a pile of tuna pattie recipes I found.

Parmesan Tuna Patties

1 can light tuna (in water not oil)
1 Tbsp. nonfat plain yogurt (only 8 calories!)
1 large egg
2Tbsp. shredded parmesan
2 Tbsp. bread crumbs
1 chopped up green onion or chive
a squirt of mustard
garlic powder
onion powder
salt
pepper

Make 4 patties and pan fry in 1 Tbsp. olive oil over med-high heat until browned to your liking.

One Patty- 120 cal, maybe 2 carbs. Not sure now that I think about it. Maybe choosing the low cal yogurt over mayo was a bad pick. But the yogurt had 17 carbs in a cup and I only used 1/16th of that. Anyway, it's healthy!

Delicious Chicken Salad


I was looking at all the beautiful pictures on foodgawker. When I found this yummy looking chicken salad on the blog Bella Eats. There's delicious chunks of almonds and dried cranberries in it. I changed it a little by adding about 1/4 cup of diced red onion. It was great with fresh pineapple chunks and my dad's coleslaw. I'm trying not to eat heavy carbs like bread in the evening. Looks like I'll be making a lot more salads!

Happy Easter



Violet got to enjoy Easter all weekend! She had an egg hunt in Mansfield on saturday. Then another one in Ft Worth on Sunday. So, she had 2 easter dresses! She got lots of toys and candy. I was so proud of her for being quiet during church on Sunday. She did occasionally yell "BABY" every time she spotted a baby. But she was good for the most part.

Working Out and My Dinner


This was my 3rd day in a row of working out this week! I have been either jogging at the park or doing a DVD. Today I did Biggest Loser Power Sculpt dvd for 30 minutes. I try to do 100 situps and stretching every day. Which reminds me I haven't done that yet! I can't decide if I should join a no-contract gym or not. You still have to put at least 60 bucks down. I'm going to try just working out at home for now. I miss my private little apartment gym. I'd like to lose 15 lbs. by the wedding. Yes, I will!

I made a stir fry for dinner. Jaley was here so I had to cook the chicken separate from the veggies. The veggies consisted of cabbage, onion, yellow squash, tomato, bell pepper and chives. I seasoned the veggies with lemon juice, garlic and low sodium soy sauce. Cooked the chicken with a little olive oil and garlic. We had roasted asparagus and brown rice on the side. I'm guessing that a serving of veggies, chicken and rice was about 500 calories.

Good Soup

We all just ate a bowl of this for dinner. It's Giada's Italian Wedding Soup.

I made the meatballs before hand instead of letting them boil with the soup (eww). Mom, Dad, and Matt kept walking by to get a taste. The meatballs were a mix of ground pork and ground beef with onion & italian parsley. After I formed the balls I baked them in a 350 degree oven for 20 minutes then broiled them to get them browned.

The soup part is a cinch to make. I topped it off with a squeeze of lemon juice and parmesan cheese shavings. We made Tom Thumb's Garlic French Bread to dip in the soup.


Violet only ate the broth part of the soup. Silly Girl :)

Friday Night Feast





My sister Justine came down to visit for the weekend. She goes to school at UNT and I only get to see her about once a month. We have been missin' her! That's her in the top pic.

Jus and I decided to cook dinner together. I made the tostadas with ground turkey and taco seasonings. We had the works for toppings. I even fried up the corn tortillas. Jus made the cilantro rice which we found here. She also made salsa which normally turns out red. We think we pulsed the tomatoes too much before adding the jalapeno & serrano. We know it looks kinda gross! Like swamp water, ewwww!

Then I made the Strawberry Shortcake recipe on the side of the Bisquick box. My favorite kind! It was delicious. Matt turned his nose up to it and said "I want my Rocky Road." I told him he was insane if he didn't taste it and sure enough he loved it! Violet had a sticky red face . Dang! I should have gotten a pic of her.
