My Dinner and Lunch


Yesterday we were cooped up in the house since it was so cold and yucky. I wanted to cook something that would take some time since I was bored. I decided to make fried chicken which I've only made a few times before. This time I used my Fry Daddy! haha! So, we had fried chicken tenders, gravy, instant garlic mashed potatoes, and sauteed squash and zucchini with breadcrumbs. Matt said, "This sum good cookin goin on here". Then he asked me to make him a big plate of food and he only could finish half of it. Violet on the other hand threw it all on the floor until she discovered the gravy. She then decided everything tasted good as long as  she was sitting in my lap and eating off my plate! Love that silly girl! (Her new words are silly girl and sleepy)

Today I made myself a quesadilla with 1 leftover tender, cheddar, and mozzarella. So good! The sauce is salsa mixed with sour cream. I was nice and let Matt have a wedge. I like food too much.

Made Violet a Tent

My little girl is sick with Pink Eye. Poor Baby. But as you can see in the picture the pink is already going away. Thank the LORD! Her eyes started to get mucosy on Saturday and Sunday morning she couldn't open her wittle eyes. So, Gigi bought her a new Elmo cup, Elmo Doll, and  a Barney movie! And then she was all better :)

Ok, not completely better. Her other Grandma came by to check on her since she used to be a pediatric nurse. She said, "Yep, she's got pink eye." Then we got a hold of her doctor on the phone and got some medicine called in on sunday. Violet is feeling so much better. The medicine is an ointment that I have to squirt in her eye and it's not easy!

How do you like her tent? Gigi gave me the idea. Violet had a good time under there. She kept taking food in to feed her new Elmo. So, he got chocolate brownie goo on his face. Happy Monday!

The Dress



We bought the dress! I'm so happy with it! It's gorgeous. I love the beaded details, the pleats, and the train. I think the pleats kinda magically make me look thinner. The first 2 photos are me in the sample dress of the one I chose. The color is pearl so it's kinda ivory but kinda not. I had narrowed all the dresses down to these two in the pictures.

I was going back and forth between the first dress and the last one. The last one looked nice on but once I started walking around with it  there was too much cleavage going on and the train just wasn't as pretty. I was really set on the sweetheart neckline. We have the option of getting the seamstress to cut a sweetheart line into the chosen dress. But I think the dress is beautiful as is!

I'm so excited. I'm going to wear my hair all down with a flower or in a low side pony tail going over one shoulder. But I'm gonna wear a flower for sure!

I feel safe posting these pics on my blog. Matt never reads it. So, it's all good!

Eat This, Not That


Eat This!
Battered French Fries.


Only 100 calories! Who knew? If your looking for a meal to boost your energy then eat a plate full of these gorgeous battered french fries! And you gotta make a dipping sauce of mayo and ketchup to go with it. Battered French Fries are not only delicious but they are nutritious as well! They make you extra sexy too. Eating a mound of fried potatoes a day keeps the doctor away! I know it will be hard my friends to eat a nice, salty fry but I have faith in YOU.

I know these vegetables might look tasty but DON'T DO IT! They are not as healthy as they appear. Did you know one bell pepper has 2,345 calories? That's almost 2 days worth of food. Why waste your calories on that when you could be eating those fries above? Crazyness! These veggies will make you moody and not happy at all. And nobody wants to be around a grump, right?!

So, my friends what do you do at 3pm and your hungry? You make some Battered French Fries. End of Story. (then you hide your face in shame when your honey walks throught the front door into a fog of greasy smoke)

Eggplant Piccolino's


I made these for lunch today. Violet threw hers on the floor. I thought the pretty colors and cheese would fool her into trying it. She ate a bite of scrambled eggs mixed with turkey and cheetos for lunch.
They were good to me and only 200 calories for 5 slices! I got the recipe from Kayotic Kitchen's Blog. I really like her cooking style. It's different and homey and still healthy.
I think I'm gonna take Violet for a walk after nap. It's a beautiful day!

Eat Your Veggies


My toddler does not eat much. At all. Which seems to be normal for her age. She's 18 months. But I've gotten lazy. I usually make her tator tots, fish sticks, and peaches for dinner. Not the best meal ever. We offer her a tiny portion of what were eating but she usually throws it on the floor. Then she only eats 2 tots and maybe one fish stick. Barely Anything! When she was 4 months old the doctor said she could have Stage One baby food. I was so excited! What could I make her? What would be her favorite? I couldn't wait to make homemade baby food.

I made pureed squash, roasted sweet potatoes, mashed up avocado, and pears. Then I would freeze little servings into an ice cube tray. That way I could thaw out just 1 or 2 cubes at a time for her. She loved it! Then once she started eating Stage 2 I felt like I couldn't keep up with all the varieties I would see at the store. Then I caved in one day and bought her Gerber Macaroni and it was all downhill from there! Just Kidding, well sort of. Cheese is her favorite food. She loves cheddar cheese, string cheese, macaroni, and cheetos. Of course! What kid doesn't.
So, I'm on a mission to get her to try new foods and LIKE them. I want her to enjoy eating fruits and veggies.

Rodeo

Last Sunday we went to a Benefit Rodeo for my late cousin Michael Williams. It was a 2 day event. We went on the second day. There was a large turnout. It was nice to see so many people that cared to raise money for his family. Violet had fun seeing all the bulls and horses. Of course she called them all dogs! Gotta work on that.

Long Night

Last night I gave Violet a bath. We read her a story in bed. I laid down with her for 30 minutes while she crawled all over me. Then we decided to let her stay up a little longer. 
I finally get her to sleep an hour later. Then around 3 in the morning she climbs on top of my back and curls up to sleep. It's weird! I don't know why she does that. But I'm afraid she's gonna roll off the top of me and fall off the bed. So, I put her back on the bed. Then she starts crying to get back on top of me. She gets quiet and I fall back asleep.
NOPE! Then she starts pinching my neck skin. Over and over and it seems to be lulling her to sleep. So, I let her pinch me forever!!! Lol, life of a mommy! The pinching gets more painful so I tell her "NICE" and she starts saying "Niiiiice" with a drawn out "S" sound. Next, she starts pulling my hair. Not to be mean or anything. It was so dark I don't think she knew what she was pulling.
Then I get up to change her diaper. Maybe that's the problem. Then she sees her stroller and starts climbing it. AHHH! She obviously doesn't want to sleep. So, I turn on her Praise Baby movie and we get in the recliner. This works for about 10 minutes until she starts crying.
At this point I'm tired and give up. I take her back to bed. Give her water and let her cry while I pat her back. Finally after 2 hours of all this craziness she goes back to sleep.

I love you Violet. But please don't do that to Mommy tonight, okay?

Inspiration Canvas


This board is a compilation of some of the wedding images I have saved. I made it at bridalcanvas.com. Super cool site! Don't judge me on my editing skills! This was the first board I have created.
The wedding dress is one of my favorites that I have tried on. I'm more curvy than the model in the pic so I think it's very flattering on me. Jordan tried on that bridesmaid dress and it looked great! Were still going over all our options before making a purchase.
I really love the mason jar candles for an outside wedding. They did that in Mamma Mia. The floral arrangement looks pretty easy to make. I loved the bright limes with the purple. So, as of right now that is my fave color combination.
Matt and I love red velvet cake. Were thinking of having a cupcake tower like the one in the pic. With a small cake on the top. I'm hoping to have fried chicken on the menu! Yummy!

I joined last March after realizing I wasn't gonna lose the baby weight by praying alone! I got hooked and lost 20 pounds in about 4 months. Sometimes I go through phases where I just workout and eat whatever I want. (Remember all those cookies I was baking?!) But since the wedding is coming up I'm trying to log my calories and workouts everyday onto spark. It's kinda like myspace for fitness people.

Dress Shopping and Dieting


We have only been engaged for 13 days and I think I've already found my dress! (not the one in the pic, that one is about 2,000!)
A few days after Christmas, Jordan thought we should go try on dresses just for fun. Good thing we did! To have a dress here in time for a summer wedding we have to order it soon.
I've got the Bootcamp Bride fever. I ran 2 miles today and lifted weights. I had been baking way too much during the holidays.
We told our little neice that her and Violet are gonna be our flowergirls. She was excited and said, "ok, so I could wear like a wedding dress you know?" Silly little girl. It will be interesting to see how Violet behaves at the wedding. She will be 2 this summer.
I didn't know wedding planning was so much work! I wish we could just go on a vacation and be done with it! Well, maybe not. I want to have our entire family there. So, there goes that idea!
