Comfort Food Must Include Gravy


Last week I could not get the thought of mashed potatoes and gravy outta my head! It was such a strong craving that I almost wanted to go to Luby's to get some quick. But my husband refused to eat at the old people place.That's how it is to be pregnant. and how I am all the time. So, I put baked chicken of some sort with mashed potatoes and gravy on my meal planner.
I don't use a recipe for mashed potatoes but butter and sour cream is always used. I looked at a few baked chicken recipes and chose this one. It was supposed to be baked with gravy and rice. So, I changed it up.
Buttermilk Baked Chicken adapted from TastyKitchen-
1/4 c. butter
4 chicken breast or 8 tenders
1/2 tsp. salt and pepper
1/2 c. buttermilk
3/4 c. flour, seasoned if you like. I used a sprinkle of garlic and onion powder.
Preheat oven to 425. (yes, I'm insane to use that high a temp in my hot,Tx kitchen) Melt the butter. Then spread in a baking dish.
Sprinkle chicken with salt & pepper. Dip in buttermilk and then roll in flour mixture.
Bake chicken for 20-25 min. then flip and bake for 10 more. To get a crispy texture you might need to broil the last few minutes.
I made gravy with some cream of mushroom like the original recipe and it was ok. I prefer making gravy from scratch on the stovetop.
But the chicken and mashed potatoes were so good together! I heated up a bag of frozen broccoli cheese to have something healthy, :) Will make again.
