We did a big celebration for her last saturday. Check out the other cake she had over at Jordan's blog. It was awesome! Then we did the small family thing with her Tuesday night.
I'm really into cooking with low-fat plain yogurt lately. I used Pioneer Woman's recipe and turned her loaf cake into 5 mini bundt cakes. They cooked for only 25 min. instead of 45. I had huge expectations for this cake being that PW included "to die for" in the title. You will love it if you like citrus-spongey like cakes. I expected it to taste more like lemon pound cake.
This was the second cake from Pioneer Woman that I have tried. I made her Chocolate Sheet cake last year and the frosting was delicious! But the cake had a very strong egg after taste. Gross, huh? I think I'm done trying her cake recipes. Now Paula Deen?! Her chocolate sheet cake is perfect in every way! I'll have to blog about it someday.
Overall, Mini Bundt Cakes are just way too cute to pass up!
